Sautéed Asparagus with onions and garlic

My experience with asparagus has been few and far between. I’ve eaten it on very rare occasions, and much like another often unappreciated vegetable, brussel sprouts, it doesn’t get much love in the kitchen. Asparagus-centric recipes or dishes normally lack taste due to minimal flavoring or its true flavor is covered in excess butter or cheese (mainly Parmesan) and often wrapped in bacon (Have you seen the amount of bacon asparagus recipes?!). To highlight and enjoy the asparagus’ natural flavor, I’ve created a dish where the herbs and seasonings accent the vegetable in taste and appearance. The recipe allowed the asparagus to have a slight crunch after cooking and no additional need for seasonings or toppings. This can be served as a side dish or entrée that is cooked and ready in 30 minutes. High in vitamins C, K and E, asparagus has the advantage of providing mood boosters/relaxers which are perfect to cheer up rainy days as well as your boo!


Servings: 3

Prep time: 10 minutes

Cooking time: 25 - 30 minutes

Total time: 35 - 40 minutes


Ingredients

22 Asparagus spears

1 Medium onion, sliced

2 Large garlic cloves, minced

3 tsp. Fresh parsley, minced

½ tsp. Black pepper

¼ tsp Onion powder

1 tsp Salt

½ tsp Black pepper

Olive Oil


Prep: Wash and pat dry the asparagus spears. Bend the stem of one asparagus, (it breaks off naturally) and use the shortened end of this spear as a marker for the remaining spears. In small bunches of 10, line the spears to the shortened one and chop the remaining stems off in one motion. Prep additional items (onions, garlic and herbs) and place aside for future use.


Directions: Heat 2 tablespoons of olive oil in a sauté pan (the amount of oil may vary depending on the size of your pan). Add onions and garlic, letting cook for 3 – 5 minutes while stirring occasionally. Add asparagus spears, let simmer uncovered for 5 minutes, cover for 10 – 12 minutes, stirring occasionally. Add 3 tsp of freshly minced parsley. Let cook for 5, remove and serve.
