Easy Lime Chicken Salad



Although all chicken salads focus on the protein, it includes a variety of ingredients distinct to the region (American, Asian or European) including apples, celery, egg, walnuts, dill or mustard. For this recipe, we focus on a more traditional but tangy mix with not-so-commonly seen ingredients such as fresh parsley and celery seed, ending with a light lime accent. This dish is great for lunches, garden or Spring - centered events, that would make a beautiful centerpiece when served with crackers, toast or pasta. You can be as creative as you like - incorporating fresh grapes, shredded carrots and even corn - to this quick and easy dish that's ready in under 25 minutes!

Ingredients


½ cup Chicken (pre-cooked, chopped)

¼ cup Yellow Onions, minced

¼ cup Bell Pepper, minced

¼ fresh Lime, chopped

2 tbsp. Fresh Parsley, diced

½ tsp. Celery Seed

½ tsp. Crushed Red Pepper Flakes

½ tsp Sea Salt

½ tsp Black Pepper

2 -3 tbsp. Mayonnaise


Prep

Rinse and prepare all fresh vegetables and herbs. Place aside for future use.


Directions

Mix all ingredients except the lime, allowing it to blend evenly. Taste for additional seasoning. Squeeze lime and mix. Serve immediately (or chilled) with fresh spinach leaves, lettuce mix or pasta.


Tips

  • Use hummus or mashed avocado for a more alkaline base for the salad. Avocado is also high in oleic fatty acid, potassium and vitamin K.

  • Top with sunflower seeds for an extra crunch.

  • Chicken can be chopped, diced or shredded based on the density and/or texture you prefer.

  • Make a kid friendly recipe by placing the salad on ritz crackers and make faces using raisins and thin shredded carrot sticks.
