Spicy Veggie Ramen

Who hasn’t heard about Ramen? These grab n’ go pre-packaged noodles have long been a college staple and common household item; with crumpled wrappings found under beds, cupboards and its seasoning packets stored in fridge doors or kitchen drawers. Although available in a variety of flavors (beef, creamy chicken, lime shrimp, oriental), the overall taste can be a bit monotone. With this recipe you can enjoy an Asian-inspired meal with levels of flavor in less than 20 minutes! Remember to mix n’ match with your favorite vegetables and garnishes.

Ingredients

1 package Nissin Top Ramen Chili Flavor

(No MSG, Vegetarian)

1 Broccoli florets, medium, with stalk

½ handful Carrots, thinly sliced

3 String beans, whole

½ tsp Italian parsley, minced

½ tsp Scallion, minced

2 dashes Black pepper

1 chili seasonal package (optional)

2 dashes Salt

1 ½ tsp Cajun seasoning

½ tsp Vegetable oil

1 quarter Lime, fresh

Directions

Prep: Wash and cut all vegetables (trim the front and end tips of the string beans, cut the stalk from floret tops and chop. Halve the from below to a forkful size.) Place all items aside.

Boil ¾ cup of water (oil included). Add vegetables (except scallions) and noodles and let cook for 3 - 5 minutes minutes (stirring once) on medium heat. Drain excess water (if you don’t want a soup-like effect). Return to heat, add seasoning packet (optional), other seasonings as well as parsley and scallion. Stir and let cook for two minutes. Remove from heat, squeeze with lime , mix and serve. Add salt and seasoning to taste.

Tips:

· Use more or less water as well as a longer cook time depending on your preference

· Other vegetables such as kale, spinach and mushrooms can be used and offer added nutrients and antioxidants
